This is due to a complex construction using stainless steel rods and wooden dowels to eliminate expansion of the wood due to moisture content.Beech wood has a similar density to maple,however due to its construction and the elimination of bands of steel which used to hold the corners together, cracks and movement within the block have been stabilized and also the potential hazard of collecting harmful bacteria within the former steel bands has now been removed.
Beechwood also offers a far more attractive grain than the more costly maple blocks.The new blocks have been designed not only for the commercial market but also for use in the domestic household.
